2 med onions, diced
1 t garlic paste
1 T chili powder (I prefer Terlingua Won from Pendery’s)
1 t chipotle powder
1 t brown sugar
2 large Granny Smith Apples, cored and diced
1 package of Soyrizo
2 cans of plain pinto beans
1 medium container of V8 vegetable juice
Cook onions until translucent, then add garlic, chili powders, sugar, and apple. When apples start to soften, add beans, soyrizo, and vegetable stock. Reduce to a gentle simmer until apples have softened.
Serve over rice.
